Protein 25 min 2 servings
A one-pan supper of golden chicken, creamy white beans, garlic and spinach.
Ingredients
- 350 g chicken thigh fillets (or breast), cut into pieces
- 240 g cooked white beans (1 tin, drained)
- 150 g fresh spinach
- 2 garlic cloves, sliced
- 2 tbsp olive oil
- 150 ml chicken stock
- 1/2 lemon
- Salt, pepper, a pinch of chilli flakes
Instructions
- 1Season the chicken and brown it in 1 tbsp olive oil over fairly high heat, 5–6 minutes.
- 2Lower the heat, add garlic and chilli flakes and cook 1 minute.
- 3Add beans and stock and simmer for 5 minutes, lightly crushing a few beans to thicken.
- 4Stir in the spinach in handfuls until just wilted.
- 5Finish with lemon juice and the remaining olive oil, and check the chicken is cooked through.
Simple swaps
- Use tinned butter beans or chickpeas instead of white beans.
- For a vegetarian version, use 250 g firm tofu or halloumi.
