Lactose-free 20 min 2 servings
Buckwheat noodles tossed in a light miso-sesame dressing with edamame and spring onion.
Ingredients
- 180 g soba noodles
- 200 g frozen edamame beans
- 1 tbsp light miso paste
- 1 tbsp rice vinegar, 1 tbsp soy sauce
- 1 tsp toasted sesame oil, 1 tbsp rapeseed oil
- 2 spring onions, sliced
- 1 tbsp sesame seeds
- 1 carrot, grated
Instructions
- 1Cook the soba noodles according to the packet, adding the edamame for the last 3 minutes.
- 2Drain and rinse briefly under cold water.
- 3Whisk miso, vinegar, soy sauce and both oils with 1 tbsp warm water.
- 4Toss noodles, edamame and carrot with the dressing.
- 5Top with spring onion and sesame seeds.
Simple swaps
- Wholewheat spaghetti works if soba is hard to find.
- Add 200 g tofu or cooked prawns for more protein.
