Gluten-free 60 min 2 servings
A proper baked potato with a bright tuna, yoghurt and sweetcorn filling.
Ingredients
- 2 large baking potatoes
- 1 tin tuna in water (150 g, drained)
- 150 g sweetcorn
- 100 g plain yoghurt
- 1 tbsp olive oil
- 1 small bunch chives, chopped
- 1/2 lemon, salt, pepper
- Green salad, to serve
Instructions
- 1Heat the oven to 200°C. Prick the potatoes and bake for 50–60 minutes until soft.
- 2Mix tuna, sweetcorn, yoghurt, olive oil and most of the chives.
- 3Season with lemon juice, salt and pepper.
- 4Split the hot potatoes and fluff the insides with a fork.
- 5Spoon in the filling, top with the remaining chives and serve with salad.
Simple swaps
- Mashed white beans instead of tuna for a vegetarian version.
- Sweet potato bakes in about 45 minutes.
