Lactose-free 20 min 2 servings
Crisp tofu and broccoli in a quick peanut, soy and lime sauce.
Ingredients
- 300 g firm tofu, cubed and patted dry
- 350 g broccoli, in small florets
- 2 tbsp rapeseed oil
- 1 tbsp cornflour
- 2 tbsp peanut butter, 1 tbsp soy sauce
- 1 lime, 1 garlic clove, 15 g ginger
- 150 ml water
- Rice, to serve
Instructions
- 1Toss the tofu in cornflour and fry in 1 tbsp oil until golden on all sides. Set aside.
- 2Stir-fry the broccoli in the remaining oil for 4 minutes with a splash of water and a lid.
- 3Add grated garlic and ginger and cook 1 minute.
- 4Whisk peanut butter, soy sauce, lime juice and water and pour into the pan.
- 5Return the tofu, toss to coat and serve with rice.
Simple swaps
- Chicken or prawns instead of tofu.
- Almond butter or tahini instead of peanut butter.
