Mediterranean 30 min 2 servings
A tray of tomatoes, chickpeas and feta baked until soft and jammy, finished with basil.
Ingredients
- 200 g block feta
- 240 g cooked chickpeas (1 tin, drained)
- 350 g cherry tomatoes
- 1 small red onion, sliced
- 3 tbsp olive oil
- 1 tsp dried oregano
- A handful basil
- Black pepper, bread to serve
Instructions
- 1Heat the oven to 200°C.
- 2Put chickpeas, tomatoes and onion in a baking dish with olive oil, oregano and pepper.
- 3Nestle the feta in the middle and drizzle it with a little oil.
- 4Bake for 25 minutes, until the tomatoes burst and the feta is soft.
- 5Break up the feta, stir everything together and top with basil. Serve with bread.
Simple swaps
- White beans instead of chickpeas.
- Halloumi can replace the feta for a firmer texture.
