Mediterranean 20 min 2 servings
Sardines grilled with lemon, served with bread rubbed with ripe tomato and olive oil.
Ingredients
- 6 fresh sardines, cleaned (or 2 tins in olive oil)
- 4 slices sourdough bread
- 2 very ripe tomatoes, halved
- 1 garlic clove
- 3 tbsp olive oil
- 1 lemon
- Parsley, flaky salt, pepper
Instructions
- 1Heat a grill pan or grill to high. Brush the sardines with oil and season.
- 2Grill 3 minutes per side, until the skin blisters and the flesh is opaque.
- 3Toast the bread until well coloured.
- 4Rub each slice with the cut garlic, then with the cut tomato, and drizzle with olive oil and salt.
- 5Serve the sardines on top with lemon and parsley.
Simple swaps
- Tinned sardines need only warming.
- Gluten-free bread works for the tomato toast.
