Mediterranean 25 min 2 servings
One tray of tomatoes, beans and sardines with oregano and lemon.
Ingredients
- 2 tins sardines in olive oil (à 90 g, drained)
- 300 g cherry tomatoes
- 240 g cooked white beans (1 tin)
- 1 red onion, sliced
- 1 tsp dried oregano
- 2 tbsp olive oil, 1/2 lemon, salt, pepper
Instructions
- 1Heat the oven to 220°C.
- 2Toss tomatoes, beans and onion with olive oil, oregano, salt and pepper on a baking tray.
- 3Roast for 15 minutes, until the tomatoes burst.
- 4Lay the sardines on top and return to the oven for 3–4 minutes.
- 5Finish with lemon juice and serve with bread or greens.
